The cars that run without a MAF have a MAFless tune. The stock PCM read A/F Ratios from the MAF at POT (Partially open throttle) and from the O2 Sensors at WOT (Wide open throttle).
What this does is it only rely's on the O2 Sensors to read A/F Ratios. People take the MAF of for restrictions and more horsepowers and big horsepower engines.
Personally I think its better to keep the stock MAF for a stock or bolt-on car till 500 HP and if your goin over that I think its better to get a ZO6/Truck MAF or MAFless as you like. However if you have a false O2 sensor on a Mafless car you'll be in big trouble.
Thanks
